Our Oil

A natural product, authentic and rich in flavor.

San Benedetto extra virgin olive oil is made from selected olives, harvested at the right degree of ripeness and cold-pressed within a few hours of harvesting. The result? A fragrant, balanced, and genuine oil, ideal for those seeking a healthy and high-quality condiment. Olives can be harvested at different times or stages of ripeness, consequently producing different products:

Grassy stage: This is generally reached during October, although for some very late cultivars, it can extend to early December. At this stage, the olives are rich in chlorophyll, and the resulting oil will contain many antioxidant substances. The taste of the oil will be particularly fruity with a pleasant hint of pungency.

Veraison and full ripeness: At this stage, the olives are perfectly ripe, have a purple skin, and can yield oils with a sweeter flavor.

Over-ripeness: Oils obtained from excessively ripe olives have a less intense flavor and a lower, less pure quality.
