Producing extra virgin olive oil is not just our job; it's a profound connection to the land of Usini, in the heart of Sardinia. Every year, we carefully follow each step of the process: from pruning the olive trees to bottling, including hand-picking, cold-pressing, and meticulous storage. Our goal is simple yet ambitious: to offer an authentic, natural, and sustainable oil that embodies the true taste of the olive and the unique character of our territory. We don't strive for large quantities, but for quality. That's why our oil tells a story of patience, respect for the environment, and passion for what is good, genuine, and well-made.

Why choose our oil

Short and controlled supply chain

Our extra virgin olive oil is born in the heart of north-western Sardinia, among the hills of Usini, a region historically dedicated to olive growing. The entire supply chain, from cultivation to milling and bottling, is entirely managed by us, a few kilometers from the oil mill. This allows us to control every step, minimize the time between harvesting and processing, and guarantee absolute freshness, quality, and transparency. Every drop of our oil tells a story of family, territory, and passion for excellence.

The Milling

We want to tell you about another fundamental aspect of oil production: what is commonly called olive milling. In the period from late September to January (depending on the variety of fruit cultivated), the olives are harvested, a unique moment that will determine the quality of the finished product. We then move on to a more delicate phase of the extra virgin olive oil production process: olive milling, which is the first true extraction phase. The fruits are taken to the oil mill.

A thorough cleaning

Once on site, the entire harvest is emptied into the defoliator, a precise machine that automatically removes leaves and twigs that have escaped the careful eyes of the farmers, separating them from the olives. Subsequently, the olives are cleaned by specific washing machines. These are industrial washing machines that ensure the olives arrive at the milling stage perfectly clean of dust, soil, and organic residues that naturally accumulate during the months of outdoor ripening. These machines operate very simply: the washing process consists of a series of elementary but nonetheless fundamental immersions in water. The thoroughly washed olives then arrive at the malaxers via the crusher, beginning the actual processing cycle known as milling.

Cold processing, as per tradition

In our Usini oil mill, oil is extracted exclusively using the cold pressing method, keeping the temperature consistently below 27°C. This delicate process, combined with the use of state-of-the-art machinery, allows us to preserve the aromas, polyphenols, and beneficial properties of freshly harvested olives. The result is an oil with an intense, balanced flavor and rich aromas – pure olive juice, without alterations or compromises. Our production takes place in small batches to ensure artisanal control and maximum quality in every bottle.
